Pastry for a 10 inch two crust pie
1 cup sugar 1/3 cup flour, or 2 tbl. cornstarch 1 tsp. nutmeg 1 tsp. cinnamon dash salt 6-7 cups thinly sliced pared tart apples 3 tbl. butter or margarine
Preheat oven 425 degrees Prepare pastry. Stir together sugar, flour, nutmeg, salt, cinnamon and flour or cornstarch. Mix with the apples. Turn into pastry lined pan; dot with butter. Cover with top crust, cut slits to allow steam to escape. Seal and flute. Cover edge with 2-3 inch strips of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking. Bake 40-50 minutes or until crust is brown and juice begins to bubble through slits in the crust.
