2/3 cup Chopped ripe tomato 1/3 cup Chopped honeydew melon 1/3 cup Chopped fresh pineapple or 8 oz. can crushed Pineapple, drained 1 tbl. Finely chopped fresh cilantro 3 tbl. Fresh lime juice 1 tsp. Olive oil 1/4 tsp. Salt
In a small bowl, combine all ingredients; mix well. Cover with plastic wrap; let stand at room temperature 15 minutes. Serve as a relish for grilled fish or meat. Makes 1 1/4 Cups
