1-8 oz. can crushed pineapple in heavy syrup 1-1/2 cups sugar 1-cup oil 4 eggs 2 cups flour 2 tsp. baking soda 1-1/2 tsps. cinnamon 2 tsp. vanilla 1 tsp. salt 2 cups shredded apples 3/4 cups chopped nuts( optional)
Drain pineapple. Reserve 2 tbl. juice for frosting. Combine all ingredients in a large bowl. Mix well. Pour into 2 greased and floured 9 inch round cake pans. Bake at 350 degrees for 35 minutes, or until cake tests done when wooden pick inserted in center comes out clean.
FROSTING: 3 oz. softened cream cheese 2 tbl. butter 1-1/2 cups powdered sugar 2 tbl. reserved pineapple syrup Beat ingredients until fluffy, add more powdered sugar if necessary to reach spreading consistency. May sprinkle top of cake with chopped nuts
