2 ripe bananas 1 egg 1/2 cup sugar 1/4 cup vegetable oil 1/2 cup milk 2-1/2 tsp. poppy seeds 1-1/2 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda
Preheat oven to 400 degrees. Fill cupcake tins with muffin liners. Mash bananas and set aside. In a large bowl mix the egg, sugar and oil together. Add milk, poppy seeds and bananas. Sift together the flour, baking powder, salt and baking soda. Add flour mixture all at once to the liquid mixture. Using a wooden spoon, stir just until moistened. Fill muffin tins 1/2 full. Bake 20 minutes or until a toothpick inserted into center comes out clean.
