8 cups unbleached all-purpose flour 1/3 cup baking powder 1 cup vegetable shortening 2/3 cup sugar 1 tbl. salt
In a large bowl, combine flour, sugar, baking powder and salt. With a pastry blender, cut shortening into dry ingredients until evenly destributed. Put in a large airtight container. Lable as MUFFIN MIX and store in a cool, dry place. Use within 10 to 12 weeks. Makes about 10 cups of MUFFIN MIX.
