1-1/2 cups wheat bran 1-1/4 cups buttermilk 1 cup whole wheat flour 1 tsp. baking soda 1/3 cup brown sugar,packed 1 egg 1 cup dried apricots,chopped
Preheat oven to 350 degrees. Coat muffin cups with nonstick cooking spray.
Combine the bran and buttermilk and set aside for 15 minutes. Combine the flour, baking soda and brown sugar; stir to mix well. Add the bran mixture and the egg; stir just until the dry ingredients are moistened. Fold in the apricots. Fill the muffin cups 3/4 full with the batter. Bake for 16 to 18 minutes, or just until a toothpick inserted in the center comes out clean. Remove the muffin tin from the oven and allow it to sit for 5 minutes before removing the muffins.
