1-2/3 cups flour 1/4 cup granulated sugar 1/4 cup brown sugar 2 tsp. baking powder 1/2 tsp. salt 1 cup coconut 1/2 cup raisins 2 bananas, mashed 1 egg 1/2 cup milk
3 tbl. margarine or butter, melted
Mix dry ingredients, add coconut, raisins and bananas. Beat egg, add milk and margarine. Add to dry ingredients, mix until moistened. Spoon into muffin pans.
Topping: 1/3 cup coconut 2 tsp. brown sugar 2 tbl. margarine 1/4 tsp. cinnamon
Mix and sprinkle over unbaked muffins. Bake at 375 for 25 minutes. Makes 12 muffins
