2 cups flour 1 tsp. soda 1 tsp. baking powder 1 tsp. cinnamon 1/2 tsp. cloves 1/2 tsp. allspice 1/4 tsp. nutmeg 1/4 tsp. salt 2 large jars apricot baby food 2 cups sugar 1 cup oil 3 eggs 1 cup chopped pecans 1 cup dried apricots, cut into small pieces
Sift together flour, soda, baking powder, cinnamon,cloves, salt, allspice and nutmeg. Add,and blend very well, the rest of the ingredients. Stir in apricots by hand. Pour into greased and lightly floured 12 inch tube pan. Bake 350 degrees for about 55-60 minutes, or until pick inserted in the center of the cake comes out clean.
May frost with Apricot Cream Cheese Frosting:
1 (10 oz.) jar apricot preserves 1 (3 oz.) pkg. cream cheese 1/4 cup butter 2-1/2 cups powdered sugar
In a small bowl; beat cream cheese and butter until smooth. Add powdered sugar; beat until well blended. Warm the apricot preserves, add to the powdered sugar mixture until the frosting reaches a spreading consistency.
