1 cup butter 2 cups sugar 2 tsp. vanilla 4 eggs 3/4 cup baking cocoa 1 cup flour 1/2 tsp. baking powder 1/4 tsp. salt 2 tsp. instant espresso coffee granules 1 cup chopped nuts
Preheat oven to 350*. Grease a 9 by 13 inch pan. In a large microwave safe bowl, place butter. Microwave at high power for 2 to 2-1/2 minutes or until melted. Stir in the sugar, espresso granules and vanilla; add eggs, one at a time, beating well after each addition. Add cocoa and beat until well blended. Add the flour, baking powder and salt; beat well. Stir in the nuts. Pour the batter into the prepared pan. Bake for 30-35 minutes or until brownies begin to pull away from the sides of the pan.
Topping: 2 cups powdered sugar 1/2 cup butter 2 tbl. Creme De Menthe 1 cup chocolate chips
Mix all the ingredients; blend well. Frost cooled brownies. Sprinkle with chocolate chips.
