1/2 cup butter 2 cups packed brown sugar 2 eggs 1 tsp. vanilla 2 cups flour 2 tsp. baking powder 1/4 tsp. salt 1 cup coconut 1 cup chopped nuts (optional)
In a saucepan, melt the butter and brown sugar. Cook over low heat until bubbly, stirring constantly. Cool. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Stir together the flour, baking powder and salt. Add to brown sugar mixture with coconut and nuts; mix well. Spread in greased 15 by 10 by 1 inch baking pan. Bake at 350* for 25 minutes. Cut into bars while still warm. Remove from pan when almost cool.
