1/2 cup dried apricots 1 cup water 1/2 cup butter 1/4 cup sugar 1/2 cup sifted flour 3/4 cup whole bran cereal 2 eggs 1 cup brown sugar 1/2 tsp. vanilla 1/2 cup sifted flour 1/2 tsp. baking powder 1/2 tsp. salt
Dice apricots and add the water. Simmer covered 10 minutes; drain. Set aside to cool. Cream the butter and 1/4 cup sugar. Stir in 1/2 cup flour and the bran. Press over the bottom of a 9 by 9 by 2 inch baking pan. Bake at 350* for 15 minutes. Meanwhile, beat the eggs until thick and lemon colored. Stir in brown sugar and vanilla. Sift together the dry ingredients; add to the egg mixture. Stir in the cooked apricots. Pour over the baked bran layer. Bake at 350* for 25-30 minutes. Cool and cut into bars.
