2 cups packed brown sugar 1 cup shortening 2 eggs 1/2 cup cold coffee 2 cups well drained chunky applesauce 3-1/2 cups flour 1 tsp. baking soda 1 tsp. salt 1 tsp. nutmeg 1 tsp. cinnamon 1 tsp. cloves 1 cup cut up raisins 1/2 cup coarsely chopped nuts
Mix brown sugar, shortening and eggs in a large bowl. Stir in coffee and applesauce. Stir in flour, baking soda, salt, nutmeg, cinnamon and cloves. Stir in raisins and nuts. Cover and refrigerate at least 2 hours. Preheat oven to 400*. Lightly grease a cookie sheet. Drop dough by rounded tablespoonfuls about 2 inches apart onto cookie sheet. Bake for 9 to 12 minutes or until almost no indentation remains when touched lightly. Remove from cookie sheet. Cool on a wire rack.
Frosting: 1/3 cup margarine or butter 1/2 tsp. grated lemon peel 3 cups powdered sugar 1-1/2 tsp. lemon juice 2-4 tbl. hot water Melt butter in saucepan. Stir in lemon peel, powdered sugar and lemon juice. Stir in water, 1 tbl. at a time, until smooth and consistency of thick syrup.
Because the thicknesses of different applesauces can vary, bake a test cookie first. If cookie spreads too much, add 2-3 tbl, more flour.
